Pancake with mushroom and cheese in sesame seed coating 2018-03-03
Ingredients:
Ingredients for pancake:
2 pcs eggs
200g flour
salt
2 dl milk with +30% increased protein content
1,5dl soda-water
1 dl oil
For the filling
50g butter
50g flour
3 dl milk with +30% increased protein content
150g Fino Smoked Trappista cheese
300g pine mushroom mix or champignon
1 bunch of parsley
salt, freshly ground coloured pepper
2 pcs egg yolk
Fort he coating:
100g flour
2 pcs eggs
100g breadcrumb
20g sesame seeds
0,5 l oil
Make some thin pancakes out of the listed ingredients. Then prepare the filling: melt the butter and slowly braise the diced mushroom on that. When the mushrooms cooks away its liquid add the flour and the mince-cut parsley. Quickly stir with the boiling milk until it’s thickening. While it’s warm add the egg yolk and the grated cheese then add salt and pepper, as desired. Fill the pancakes with this filling then roll them up. Then comes the coating. Dip the pancakes first in flour, then dip them in the whisked eggs, finally in the breadcrumbs mixed with sesame seeds. Fry the evenly shaped pancakes in hot oil and then serve them with salad.
