If you prepare a dish with pork lard, onion and spice peppers, you can be sure that you eat Hungarian food delicacy. The modern age dining revolutions and „trendiness” haven’t brought down the resistance of Hungarian traditions.

Cheese- and mushroom-roasted pork tenderloins together with vegetables 2018-03-03

Ingredients:

  • 600g pork tenderloin

  •

    10g roughly ground coloured pepper

  •

    150g Fino Smoked Trappista cheese

  •

    200g champignon

  •

    1 kg potato

  •

    200g tomato

  •

    1 bunch of green onion

  •

    1 dl cooking oil

  •

    half bunch of fresh oregano

  •

    half bunch of fresh basil

  •

     salt

Cut the tendreloins to 50 – 60 g slices, mildly slap them, flavour them with salt and pepper and pre-roast both sides. Toast the mushroom slices in the remaining oil after sprinkling them with fresh oregano and basil. Pile them on top of the tenderloin slices. Grate cheese onto the mushroom then bake them in the middle of an oven pan or in a clay bowl. Add the potato slices after 10 minutes of baking. When the cheese has started to roast and the potato is soft enough add some tomato and sliced green onion. Bake for some minutes and serve them in the clay bowl or on a porcelain platter.
