“Bumpy Curd” is known in Central Europe, but today there is also a huge selection of curds on store shelves. They also differ greatly in whether they are stored in sachets, aluminum foil or jars. The customer chooses who likes the coarser, who likes the creamier texture. The raw material for pasteurized, homogenized milk is raw, whole sweet milk. After ultrafiltration and adjustment of fat content, the raw material is pasteurized, homogenized, cultured and inoculated. Until dosing, it was stored, packaged and matured in a post-storage container. In the case of machine-packaged products (eg crucible curd), a homogeneous block which can be broken into sets of loose lumps. Due to its technology, it is a product melted in a jar that takes the form of primary packaging material.
