Szekszárd cheese delicacy with nuts, served on apple crouton 2018-03-03

Ingredients:

  • 250g Szekszárdi cheese delicacy (Szegzardina)

  •  

    2 pcs red apple (eg.: Idared)

  •  

    200g celeriac

  •  

    50g nuts

  •  

    4 pcs lemon grass

  •  

    cooking oil for frying

  •  

    sugar

Cut the cheese delicacy to 5 mm wide slices, take out the core of the apple and cut it to 15 mm slices without peeling. Peel the celeriac and slice it to 1-2 mm wide pieces. Fry the celeriac slices in hot oil thus preparing celeriac chips. Rough-cut the nuts and slightly roast them in a pan. Place the apple slices in the pan, sprinkle them with some sugar and stew it under pan cover for 2 minutes until the apple slices are crunchy. Then grill the cheese. When served, place the celeriac chips on top of the hot, slightly caramelized apple and slide the cheese onto it. Finally, sprinkle the top with the roasted nuts. Decorate with lemon grass.
