Piquant cheese puffs 2018-03-03

Ingredients:

  • 150g butter

  •  

    100g flour

  •  

    4 dl milk with +30% increased protein content

  •  

    10g salt

  •  

    150g Fino Szegzardina cheese

  •  

    5 eggs

  •  

    5g ground nutmeg

  •  

     5g freshly ground coloured pepper

Warm up the butter and slowly add the flour while slightly toast it on the butter. Then pour the boiling milk into that and boil for a minute together with the grated cheese until it’s thickening. While it’s still warm add the salt, spices and the egg yolk. Whip the egg whites until they form stiff peaks and gently fold them into the cheese puff base. Pour the mixture to a buttered and floured loaf pan or puddig mold till they’re half-full. Place the molds on tepid water beds and slowly cook them over the slightly boiling water (tiny bubbles in the water). Leave the mixture in the warm molds until serving.
