Grilled Vinoforo cheese bites on a bed of salad with bacon and nuts 2018-03-03

Ingredients:

  • 300g Vinoforo cheese

  •  

    50g corn salad

  •  

    50g lollo, rosso salad

  •  

    5 pcs of cocktail tomatoes

  •  

    50g nuts

  •  

    100g sliced bacon

  •  

    Salad dressing: 2 cl slightly hot mustard, 5 cl olive oil, 2 cl lemon juice, pinch of salt, sugar

 

 

Prepare the salad. Wash the salad leaves thoroughly in running water, then cut the coctail tomatoes to four parts. Slightly toast the roughly-cut nuts in a pan then mix together with the salad. Cut the bacon slices to thin stripes, then cook the bacon stripes on low heat while constantly stirring until they become crispy greaves. Filter down these greaves than add them to the salad mix as well. Roast the cheese on a little bacon gravy in a hot skillet or a hot roasting board. It’s important that the roasting board should be preheated well so that both sides of the cheese should roast. Prepare the dressing for the salad mix. Give a little oil and flavourings to the mustard. Sprinkle the salad with the dressing and place the soft cheese on top. Serve it while hot.
